TASTING NOTE
The nose is fragrant with the floral and herbal aromas of white champaca blossom and sandalwood. Juniper leads on the palate and is joined by the warm citrus notes of aged tangerine peel and east Asian herbs. The finish is a long-lasting cacophony of longjin green tea and Chinese angelica.

TASTING NOTE
This is the first gin we have crafted in Hokkaido.
A small window opened in the northern land—made with the clear, icy snowmelt of Mount Daisetsuzan, paired with rice kōji from Higashikawa and tender fir needles from the forests of Daisetsuzan, joined by fourteen botanicals in total.
Through this bottle, the pale, mystical light that fills the sky amid falling snow is gently refracted into the glass in your hand.
This gin is the culmination of our years of effort, and a marker of the new journey we begin here in Hokkaido.

This month’s thence. features the traditional Five Flower Tea — a gentle harmony of honeysuckle, chrysanthemum, kapok, frangipani, and sophora flower.
Softly golden in hue, the blend opens with bright floral notes and a hint of wild honey. Beneath, an earthy whisper of dried herbs and autumn leaves brings warmth to the cup — a calm balance of fragrance and depth, soothing to both body and spirit.

This year’s Mid-Autumn Festival brings a limited-time re-release of the all-time best-selling thence. 05, crafted with premium Thai golden pomelo and a base of local honey from Hong Kong’s Wing Wo Bee Farm.
The peel and flesh of the fruit are processed separately, with extraction completed at a local workshop.

1. 白蘭花 White Champaca
2. 陳皮 Aged Tangerine Peel
A subtly elegant aroma of white champaca used inn the Perfume Trees Gin. A. summer scent that lingers around the streets of Hong Kong. Truly resembling the soul and heritage of our city.
The bitterness of the tangerine peel has been softened by its traditional long aging process, leaving only the sweet citrusy flavour that has become a household seasoning with medicinal properties throughout southern Chinese culture.
3. 龍井茶 Longjin Green Tea
4. 當歸 Chinese Angelica
Carefully selected a premium tea blend of Longjin green tea from a 50-years-old traditional tea house in Hong Kong. Setting a strong and flavourful foundation to the gin.
The warm, earthy and liquorice tinted Chinese angelica has been used to replace typical angelica in traditional gins to introduce a longer after taste with a hint of Chinese herbal aroma.
5. 檀香 Indian Sandalwood
A historic memory of the aromatic woods that once flowed through our island harbour, leading to our name Port of Fragrance, and today it is still used in temples around Hong Kong.
